TABBOULEH




1 cup cracked wheat

1/4 cup fresh mint, chopped

1 cup parsley, chopped

2 tomatoes, chopped

2 tablespoons pure olive oil

1/4 cup lemon juice

salt and freshly ground black pepper to season


Put cracked wheat in a bowl. Cover with boiling water. Leave to stand for 30 minutes. Stir and drain if necessary. Add the mint, parsley, tomatoes, oil and lemon juice. Stir to combine. Season to taste with salt and pepper. Chill before serving.
