PORK FILLET, CHINESE STYLE




2 medium whole pork fillets

1 spring onion, sliced

1/4 cup soy sauce

1 teaspoon grated root ginger

1 tablespoon liquid honey

1/2 teaspoon cinnamon

1 tablespoon brown sugar

1 teaspoon red food

2 cloves garlic, crushed

colouring (optional)


Trim fat from meat. In a large bowl or shallow ovenproof dish, combine soy sauce, honey, sugar, garlic, spring onion, ginger, cinnamon and food colouring. Stir to combine. Add pork fillets, turning to coat. Leave to marinate for at least 1 hour, turning occasionally. Drain pork from marinade and place on a rack over roasting dish. Cook at 1900 C for 20 minutes or until juices run clear when tested with a skewer. Baste with marinade during cooking time. Serve with stir-fried vegetables.
