1/4 cup pure olive oil
4 onions, sliced
2 tablespoons brown sugar
2 cloves garlic,
crushed 1/4 cup dry white wine salt
and freshly ground black pepper to season
Heat oil in a frying pan. Cook onions over a very low heat, stirring occasionally, for 30 minutes. Add brown sugar and garlic and cook for 2 minutes, stirring constantly. Add wine and cook for a further 8—10 minutes. Season to taste with salt and pepper. Cool. Stored in a covered container in the refrigerator.
The Onion Marmalade will keep for 1 week.
